This course aims at gaining the managerial proficiency of scullery, kitchen operation and business organization by determining the staff needed.
In this course, the students are lectured about determining and hiring staff that are able to work at kitchen operation, managing kitchen routines, building kitchen brigade, managing scullery and managing waste recycling regarding post production in a kitchen.
