Objectives of the Course

The aim of this course is to inform the students about heat and mass transfer which are one of theoric transport mechanisms. Moreover theoretical knowledge is consolidated with applications of heat and mass transfer in food industry.

Course Content

Thermal conduction, convection and radiation; heat exchangers; the principles of steady state and un-steady state heat transfer mechanisms are taught in the scope of heat transfer. Fundamentals of mass transfer, phase equilibrium and related diagrams, steady state and un-steady state molecular diffusion in gases, liquids and solids.

1.To be able to learn the heat and mass transfer mechanisms
2.To have knowledge about the basic principles of steady and unsteady heat and mass transfer
3.To be able to understand the significance of heat and mass transfer in food industry
4.To be able to combine the basic engineering knowledge with transport mechanisms
5.To have capability in making heat and mass transfer balances and to understand the analogy between them; to be able to make analysis, solving and evaluation for any heat and/or mass transfer system
