Objectives of the Course

The course aims to ensure that students gain knowledge about food processing machinery, technology, and operating principles.

Course Content

The course will provide comprehensive fundamental information on the operating principles and characteristics of separators, mixers, conveyors, filters, heat exchangers, evaporators, homogenizers, dryers, and freezers used in the food industry.

1.To examine the operating principles of machines used in the food industry.
2.To research the equipment and machines to be selected based on the characteristics of the food product to be produced.

5.To discuss and compare the hygiene suitability of food production setups.

Week 1 - Theoretical
The definition of food machinery and equipment, its historical development, current applications, and future trends considering technological innovations, design of food processes and food processing plants
Week 2 - Theoretical
Thermal processing machines and equipment, evaporators, deaerators, deodorizers
Week 3 - Theoretical
Condensers, blanching, frying, cooking, and roasting machines and equipment
Week 4 - Theoretical
Pumps, the use of pumps in food processing systems, types of pumps, applications in food production, design, and selection criteria
Week 5 - Theoretical
Conveyor systems, principles, and types of pneumatic, hydraulic, and mechanical conveyor systems
Week 6 - Theoretical
Size reduction, equipment used, food processing applications
Week 7 - Theoretical
Agglomeration (pelletization) definition and types: wet and dry, mechanisms and equipment used, applications in the food industry, factors affecting agglomeration
Week 8 - Theoretical
Filtration, principles of filtration in food processing, types of filtrations (microfiltration, ultrafiltration, reverse osmosis), equipment used, liquid food processing applications

Centrifuges, operating principles of centrifuges, types, applications for separating solid and liquid phases

Peeling processes, peeling techniques and mechanisms in food products, equipment used and effects on product quality, industrial applications

Irradiation and ultrasound, principles of food irradiation and ultrasound technologies, safety, and regulatory standards

High-pressure processing (HPP) fundamentals, equipment, and process parameters, food preservation with pulsed electric field (PEF) technology, applications
