Objectives of the Course

The objective of the course is to gain knowledge and skill competencies related to technology assessment and processing of animal side-products.

Course Content

The importance, assessment, amounts, and methods of calculation of slaughterhouse by-products. The importance in nutrition of offal items and its evaluation forms. The processing of intestines and fats. Evaluation of the skin. Slaughterhouse by-products used in animal nutrition. Rendering systems. Evaluation of poultry slaughter by-products.
