This course aims to enable students to comprehend the physical and chemical properties of milk and to understand how these properties influence product manufacturing. It also seeks to provide students with knowledge about the dairy products most commonly produced in Turkey and worldwide by helping them understand the fundamental stages of milk processing and product creation.
This course will cover the chemical structure of milk, followed by an explanation of the preliminary processes applied to raw milk in the processing plant and the subsequent technologies used to produce various dairy products.
