Objectives of the Course

The aim of this course is to provide students with an understanding of environmental and sustainability concepts within the context of food production systems, to develop awareness of the efficient and responsible use of natural resources, to enable them to evaluate the environmental impacts of food production processes, and to equip them with the knowledge, skills, and professional perspective necessary to integrate sustainable production principles, resource efficiency, waste management, circular economy, environmental performance, and digital sustainability practices into their professional applications in an environmentally responsible and sustainable manner.

Course Content

This course covers the concepts of environment and sustainability, the importance of ecosystems and natural resources in food production, the environmental impacts of food production processes, the relationship between climate change and food systems, waste management, circular economy, resource efficiency, sustainable production technologies, the relationship between food safety and environmental sustainability, sustainable packaging and logistics, prevention of food loss and waste, carbon and water footprints, life cycle assessment, environmental management systems, sustainability standards, green transformation, digital sustainability practices, and future sustainable food systems within the framework of professional applications.

2.Analyzes the impacts of food production processes on natural resources, the environment, and climate change.
3.Evaluates resource efficiency, waste management, and circular economy practices in the food sector in accordance with the principles of sustainable production.
4.Interprets the relationship between food safety, environmental management, and sustainability from the perspective of professional practice.
5.Explains environmental performance indicators such as carbon footprint, water footprint, and life cycle assessment, and relates them to food production processes.
6.Evaluates sustainable packaging, logistics, green transformation, and digital sustainability practices in line with current developments in the food sector.
7.Interprets sustainable production approaches aimed at reducing environmental problems by developing solution proposals for professional problem situations.
8.Develops the knowledge, skills, and professional perspective necessary to integrate environmentally responsible and sustainable production principles into professional decision-making and practice.

Weekly Detailed Course Contents
Week 1 - Theoretical
Introduction to Environment, Ecosystems and Sustainability: Fundamental concepts of environment, ecosystems, natural resources and sustainability are introduced. The relationship between food production and the environment is discussed.
Week 2 - Theoretical
Natural Resources and Food Production: The importance of soil, water, air, energy and biodiversity in food production is examined. Principles of sustainable resource use are discussed.
Week 3 - Theoretical
Environmental Impacts of Food Production: Water consumption, energy use, waste generation and environmental impacts of food production processes are analyzed.
Week 4 - Theoretical
Climate Change and Food Systems: Causes of climate change, its impacts on food production and its significance for sustainable production are discussed.
Week 5 - Theoretical
Waste Management in the Food Industry: Organic and inorganic wastes, waste reduction, resource recovery and environmentally responsible waste management practices are examined.
Week 6 - Theoretical
Circular Economy and Resource Efficiency: Circular economy principles, reuse, recycling and valorization of by-products are explained.
Week 7 - Theoretical
Sustainable Food Production Technologies: Cleaner production, energy and water efficiency, and environmentally friendly production technologies are evaluated.
Week 8 - Theoretical
Food Safety and Environmental Sustainability: The relationship between food safety and environmental sustainability is examined in terms of hygiene, sanitation and resource management.
Week 9 - Theoretical
Sustainable Packaging and Logistics: Environmentally friendly packaging materials, sustainable logistics practices and food loss reduction are discussed.
Week 10 - Theoretical
Food Loss and Food Waste Prevention: Environmental, economic and social impacts of food loss and food waste are evaluated together with prevention strategies.
Week 11 - Theoretical
Sustainability Indicators and Environmental Performance: Carbon footprint, water footprint, life cycle assessment and environmental performance indicators are introduced.
Week 12 - Theoretical
Environmental Management Systems and Sustainability Standards in the Food Industry: Environmental management systems, sustainable production approaches and corporate environmental responsibility are examined.
Week 13 - Theoretical
Green Transformation and Digital Sustainability in the Food Industry: Digital technologies, smart production systems and data-driven environmental management practices are evaluated.
Week 14 - Theoretical
Future Food Systems and Sustainable Professional Approach: Future food systems, sustainable development goals and professional responsibilities are evaluated comprehensively.
