Objectives of the Course

The objective is to provide participants with the skills to collect samples of milk and dairy products in accordance with regulations and analytical methods, determine the suitability of raw milk for processing, and perform and evaluate milk analyses.

Course Content

This section covers assessing the suitability of raw milk delivered to a dairy plant for processing, determining which products the milk will be processed into based on established quality criteria, and conducting the relevant analyses.

1.Correctly collects and prepares milk samples and evaluates their sensory characteristics.
2.Determines key quality parameters of milk, such as acidity, pH, and dry matter, and interprets the results.
3.Determines the fat content of milk.
4.Determines and evaluates dry matter in raw milk
5.Determine and evaluate foreign matter in raw milk
6.Learns to identify milk obtained from diseased udders and to assess it from a food safety perspective based on analysis results.
