Objectives of the Course

The aim of this course is to provide students with knowledge about the history, production, chemical constituents, quality criteria, safe use, and brewing techniques of herbal teas, and to develop their skills in evaluating herbal teas and preparing appropriate tea blends.

Course Content

History and classification of herbal teas, plant species used in tea production, active constituents, quality criteria, brewing techniques, safety principles, functional teas, herb-drug interactions, and current industrial applications.

1.Identifies medicinal and aromatic plant species and plant parts used in herbal tea preparation.
2.Explains the major bioactive compounds found in herbal teas and their characteristics.
3.Compares infusion, decoction, and maceration methods used in herbal tea preparation.
4.Evaluates the effects of harvesting, drying, and storage conditions on the quality of herbal teas.
5.Explains the basic principles of quality control, standardization, and pharmacopoeial requirements related to herbal teas.
6.Evaluates the safe use, potential adverse effects, and herb–drug interactions of herbal teas.
7.Formulates herbal tea blends for specific purposes and applies appropriate preparation techniques.

Weekly Detailed Course Contents
Week 1 - Theoretical
İntroduction to the concept of herbal teas, historical development of tea, tea culture in Türkiye and around the world, and traditional and modern uses of herbal teas.
Week 2 - Theoretical
Differences between teas derived from Camellia sinensis and herbal teas, classification of teas, and their basic characteristics.
Week 3 - Theoretical
Plant parts used in herbal teas (leaves, flowers, fruits, roots, bark, seeds, etc.) and their effects on tea quality.
Week 4 - Theoretical
Chemical constituents of herbal teas including phenolic compounds, flavonoids, alkaloids, essential oils, and other bioactive substances.
Week 5 - Theoretical
Harvesting, drying, storage of medicinal and aromatic plants, and evaluation of factors affecting quality.
Week 6 - Theoretical & Practice
Herbal tea preparation methods I: Principles, advantages, and applications of infusion, decoction, and maceration techniques.
Week 7 - Theoretical & Practice
Herbal tea preparation methods II: Effects of water quality, temperature, brewing time, and equipment selection on tea quality.
Week 8 - Theoretical & Practice
Single-herb teas including chamomile, sage, fennel, lemon balm, linden, and similar plants, their characteristics and areas of use.
Week 9 - Theoretical & Practice
Functional herbal teas, health claims, scientific evidence, and evaluation of consumer trends.
Week 10 - Practice
Criteria for preparing herbal tea blends, formulation principles, and sensory evaluation.
Week 11 - Practice
Criteria for preparing herbal tea blends, formulation principles, and sensory evaluation.
Week 12 - Theoretical
Quality control and standardization of herbal teas, pharmacopoeias, labeling requirements, and product reliability.
Week 13 - Theoretical
Safe use of herbal teas, potential adverse effects, toxicity, and evaluation of herb-drug interactions.
Week 14 - Theoretical
Herbal tea industry in Türkiye and worldwide, sustainable production, new product development, and current market trends.
