Objectives of the Course

This course aims to teach students the definition, importance, and classification of food additives in accordance with the Turkish Food Codex (TFC) legislation; to familiarize them with the E-code system and functional classes; to introduce the properties of substances that extend shelf life and improve sensory and nutritional characteristics; and to enable students to identify additives by analyzing the ingredients list on food labels.

Course Content

The course content includes the definition, importance, and Turkish Food Codex (TFC) legislation regarding food additives; the E-code system and its general introduction; basic additive groups such as acids, preservatives, antioxidants, emulsifiers, colorants, and sweeteners; processing aids and enriching agents; and application of reading ingredient lists and E-codes on food labels.
