Objectives of the Course

The aim of this course is to teach students in the Food Quality Control and Analysis Program the industrial processes by which animal and plant-based raw materials are processed into final products. The goal is for students to understand the production technologies of basic food groups such as milk, meat, oil, fruits and vegetables, and grains, and to be able to explain the technological processes involved in these productions using scientific principles.

Course Content

This course examines the production technologies that constitute the fundamental branches of the food industry. The content covers, in order: dairy product technologies such as drinking milk, yogurt, and cheese; and meat product technologies such as sausage, salami, and pastrami. Subsequent sections theoretically address sunflower and olive oil production processes, fruit and vegetable processing technologies such as tomato paste, canning, and fruit juice production, and basic grain technologies such as bread and biscuits.

Learning Outcomes
1.Ability to define the industrial production stages and basic technologies of milk, meat, oil, fruits-vegetables, and grain products.
2.Ability to explain processes such as pasteurization, fermentation, and extraction applied in different food production techniques within the framework of food science principles.
3.Ability to examine the upcycling potential of agricultural waste and by-products generated in food production processes (fruits-vegetables, grains, etc.), and evaluate methods of reintroducing them into the food industry and using them in innovative formulations within the framework of sustainable production principles.
4.Ability to evaluate the principles of using raw materials, additives, and packaging materials in food production processes in accordance with quality standards.
5.Ability to compare traditional and modern production methods by following scientific and sectoral developments in the food production industry.
