This course aims to equip undergraduate students in Nutrition and Dietetics with the interpersonal communication, counseling, documentation, and teamwork skills necessary to provide effective, safe, and patient-centered nutritional care in clinical and public health settings.
The course covers the theoretical foundations and practical development of communication skills that are critical in the practice of dietetics. Starting with communication models and patient-centered care principles, the course includes verbal and nonverbal communication, active listening, empathetic responses, the fundamentals of patient counseling, motivational interviewing techniques, health literacy, cultural competence, interprofessional communication, ethics and professional boundaries, conflict resolution, professional written documentation, digital and telehealth communication, and group and team communication.
