This course aims to equip dietetics students with fundamental counseling competencies (motivational interviewing, client-centered communication, behavior change planning, cultural competence, and group facilitation) and to develop their ability to support dietary behavior change by applying these skills during the assessment, intervention, and evaluation phases of the nutrition care process
This is a 14-week, competency-based undergraduate course. It combines short presentations, demonstrations, supervised role-playing exercises, case analyses, simulated and real client encounters, and structured reflection activities. The course content is drawn from Motivational Interviewing and client-centered models, linking behavior change theory to measurable counseling practices and the Nutrition Care Process.
