The aim of this course is to teach the principles of fundamental dairy processing operations (such as separation, homogenization, thermal processing, and drying) and to integrate these processes with digitalization, automation, sensor technologies, data analytics, and artificial intelligence applications. The course also aims to enable students to understand and evaluate smart manufacturing systems used in the modern dairy industry.
This course covers the fundamental unit operations of dairy processing engineering, including separation, emulsification, homogenization, reaction kinetics, thermal processing, evaporation, and drying systems. While the engineering principles and operating mechanisms of these processes are explained in detail, they are also examined in relation to Industry 4.0 applications, IoT-based monitoring systems, SCADA systems, big data analytics, and AI-assisted quality control approaches. The course aims to provide students with a comprehensive understanding of both traditional dairy technology and digital transformation processes in an integrated manner.
